Glasswort was eaten fresh with vinegar, pepper and olive oil, or packed for winter consumption in sealed jars with vinegar only, as the plant contained plenty of salt already (Grace Lewis, The Post-Standard, Friday, 13 May 1933, Sect. 2, p 21).
Most specimens of this taxon were at one point named Salicornia virginca. The name Salicornia virginica has been misapplied to this perennial taxon as the type specimen of S. virginica is an annual species (Ball 2003).
